The texts in the bible were all created around 325 C.E. when Constantine formed the Council of Nicea and told them to create the final "official" bible which would be used by his new state religion.
As for JC being prophesied in the OT, have you ever asked yourself why his own people don't believe him to be the son of god? (Of course you haven't. You don't question anything.) Here's the answer, according to the Jews there is no prophecy of god sending a son down to earth. It's all a translational problem with the word "messiah".
