When the conditions are right, you have to eat what you have to eat to survive. I'm guessing this is the due process of natural selection. We have such a cultural taboo on consumption of insects, much like how those tribes who colonized Greenland, had a cultural taboo on eatting fish, which would reduce the ecological impact.
