“There is no intrinsic reason that fresh produce should only be sold in air-conditioned buildings under fluorescent lights. Open air markets should provide good selection, quality and price in order to attract a wide range of customers,” he said.
Along with the concept of free markets, Johnson said it is important to develop a local market to distribute and sell an increased number of local goods.
“Peak Oil — the phenomenon of infinitely rising transportation costs cause by depletion of world oil reserves — will require the removal of all barriers to increased local food production and direct sales to the public. UCM is blazing the trail towards this objective,” Johnson said.
“What we are trying to do is establish a principal of freedom of markets. We need to eliminate regulatory barriers that stand in the way of that increased food production and we are confronting those barriers directly at the Ukiah Community Market.”
