Let's talk about breakfast.

This morning, my old lady shagged me out of bed to get the day started, so I wandered off to the kitchen to see what was to be had. She nuked a thing of instant raisin/cinnamon oatmeal and held her end of the kitchen table up while I got busy.

First, I got a little pot of water on a burner to get it boiling, and ground some Colombian coffee for a fresh pot. The coffee started up and filled the room with a lovely smell. Bracing, as it were.

I put two slices of good buttermilk white bread in the toaster and heated up a pat of butter in a frying pan. Then back to the fridge for a handful of asparagus, some yellow onion, a few fresh jalapenos, and a handful of shrimp from the freezer. I had half a bag left over from a previous dinner. So the shrimp and a little garlic started off the stir fry,

Then in with the onion to soak up the heat on the hotspots, and then the asparagus and jalapenos. I flipped the veggies around for a minute and made sure the water was boiling rapidly, and cracked a couple of jumbo brown organic free-range eggs to poach.

On a nice relaxing Sunday morning like this one, I like to heat up the plate. I put the plate and a quarter cup of water in the microwave for three minutes while the water poached the eggs.

While that's going, I poured a half-grapefruit half-OJ and a cup of coffee, put the toast on the hot plate, picked up the poached eggs and slid them on the bread and topped it all off with the veggies and a little kosher salt and some cracked black pepper.

We pulled up the shutters to watch the mist and rain against the mountains here in Mayberry and had a nice warm feeling for a couple hours, before it was time for me to head off to the library to study for a couple hours.

Smell the fresh air through the rain, people. This is the apex of civilization, and we have a long way down to go.

Sunday morning I made crepes with some of our eggs and freshly ground flour, served with freshly whipped organic cream from a local farm and frozen strawberries from last year's garden and canned pears from our orchard, along with a cup of French Roast coffee ground minutes before.

Breakfast is always an important meal at our house, but I had to make do with a few slices of french toast and local maple syrup today, as I was running short of time.

We'll be eating more omelets with lots of vegetalbes soon, when the chickens are laying more eggs.

I would die without breakfast since I get up every morning except Sunday at 6:10 to lift or run.

Typical breakfast is what I had today:

Six egg-white omelet with some chopped yellow and red bell peppers and a slice of pepper cheese. Four slices of wheat toast with butter and blackberry jam from blackberries picked last summer in our backyard.

Black coffee... lots of it.

Simple... hearty... healthy.

The most entertaining aspect of breakfast at my house is usually my 4 year old son growling at me or my wife like a grouchy old man to get him some chocolate milk.

No. Time is beginningless and endless to Buddhists. Just joking about the Monday morning wisecrack PMS... :-D

What do I do with my egg yolks? Down the drain. I would like a better solution because I toss about 1,500 to 2,000 of them down the drain each year and it does seem rather wasteful of me.

Not good. 4 year olds should not be in a position to demand anything. You gotta be doing something wrong there, LittleTex.

may or may not be true. The nutritional doctor here says one egg yolk contains an enzyme that negates the chloresterol in five eggs.

Oh lord, don't throw the yolks away! That's where all the vitamins A and D and other good stuff is if they're coming from healthy chickens. Freeze them and donate them to someone you know with small children, or better yet, eat them.

Don't believe the people who say they aren't good for you. Check this article out and the rest of the site is very informative as well.

I love breakfast food but I usually eat it at night. In the morning I usually have something sweet and an espresso or two. Today I had my last chocolate chip scone that I made 2 days ago. Making oatmeal cookies tonight.

With egg yolks you can make pie crusts, some cheesecake recipes, or custard or something.

Yeah, you're right, of course, and we do use many... but I burn through 2,000 of 'em. I would have to open a restaurant!!

And that ain't gonna happen...

But why throw them away? EB, you'd better go read my link right now.

Next weekend maybe, an omelet of fresh eggs, lobster, fontina cheese, and chives with some toasted french bread and fresh orange juice. Cranberry and orange mixed is good too.

OK, the lobster is a bit over the top. I only do that once or twice a year. For me though, food is not a place to cut corners.
