The first thing I would do is make sure nobody knew who I was. Otherwise you are subject to blackmail or murder of yourself or those you care about.
Secondly if I truely controlled the weather I would bring gentle rains to the desserts of the Earth in the arid zones every night so that they would grow grasslands and/or forests and in the process soak up gigatons of carbon emissions from foolish humans.

I would bring good weather to my friends and allies and non-stop horror to my enemies.
And yes, gentle rains to the deserts is a good idea. The Amazon could use a few more rainclouds too.
Lastly, I'd keep the polar ice caps cold so as not to flood Louisiana, New York City, the Netherlands, etc.
