Well, if it comes down to dire straits for the human race, I'm pretty that science has been able to modify the smallpox virus to be super lethal, permitting NO unprotected survivors.
If people were cannibalizing each and burning every last tree and trashing the planet, you can bet your ass that a killer virus or several of them will be released.
People with power would simply calculate how to do away with such a destructive excess of population. Some sort of new equilibrium with the carrying capacity of each region of the Earth would be sought.
But, that's kind of an extreme. Probably, as oil and gas grow scarcer that heat and pressure will be turned up quite naturally on everyone to arrive at viable solutions. It's like pitched war - people become extremely inventive during crisis. They exceptionally brilliant during times of high stress.
And all it takes is for one mind to conceive an inkling of an idea. That idea is passed on to other brilliant minds and sparks new ideas which get passed around... Who was it that said a date with the executioner concentrates the mind wonderfully?
I would sort of expect that some sort of die-off is likely but that a new human-environment equilibrium will result. It's just like a forest fire wiping out dense and stunting old growth.
I surely do not expect that people will forget about technology or science and go back to living like the Amish. That's seems like a very childish notion to me.
You have to wonder: In the absence of oil and gas entirely, what number of human beings living on the planet would enable the culture to continue advancing in scientific/technological knowledge and living very well? But then, you know, oil and gas will never 'entirely' run out. It has not been proven impossible that advances in energy science can be made.
So what number are you comfortable with? 500 million? A billion?
Life could be good for them.
