I've been making my dinner for the past 20 years. Here's a favorite recipe.
APOCALYPSE BEAN AND RICE SOUP.
Equipment: three quart pot, some sort of stove
Ingredients:
2.5 quarts of water
1/2 cup dry cranberry beans
1/3 cup dry great northern beans
1 tablespoon of salt
1 tablespoon of cajon spice
1/2 tablespoon of red pepper (loosely piled)
1/2 teaspoon of cumin
1/4 teaspoon of black pepper
1/2 teaspoon oregano flakes (or 1/4 tsp powder)
1 tablespoon minced garlic
12 slices of pepperoni
1/2 cup white rice
Directions:
Fill pot with 2.5 quarts of water. Bring water to boil. Put the beans into the pot. Reduce heat. Cover pot. Cook until beans are soft.
Refill the pot with water to replace evaporation. Add to the pot the salt, red & black pepper, cumin, cajon spice, oregano, garlic, and pepperoni. Cover pot and cook for 30 minutes.
Add the rice. Cover pot and cook until rice is done.
VARIATIONS: Diced bits of smoked ham can replace the pepperoni. Chives can be used in place of oregano. Less red pepper can be used by those wanting a milder soup (the amount indicated will make a grown person sweat). Finely chopped carrot rounds or diced mushrooms can be added just for the hell of it. The "po' boy" version of this dish is pared back to exclude all ingredients except water, beans, rice and salt.
I developed this recipe as a quest for the ideal food to stockpile for the dieoff, then added some refinements (spices, meat) to enjoy while they last. Rice and beans are super cheap to buy at a discount grocery, such as Save-A-Lot, and the dried stuff will last for years if protected from moisture.
