The Amish have decided to maintain a rural lifestyle, to stay connected to the land, the earth, natural cycles, and their own community by minimizing dependency on the industrial/consumer society. Their tool choices reflect that commitment.
And the Amish haven't been the only religious community to use thinking along this line. One group I saw a documentary on which I thought had a neat twist on the Amish plan were the Hutterites. Roughly, the compare to the Amish, except they are willing to use technology for work (but not personal comfort).
And they very effectively did so in farming, basically kicking the collective asses of their competition, by working long days, 7 days a week. Naturally, their competition didn't like that. So it goes in America.
