The higher up the food chain the more toxic the meat (especially the liver); as noted by other posters. Another issue is worm infestation, in tropical climates there are types of worm which infest muscle and skin as well as gut. This means the meat must be thoroughly cooked.
Most Australians would not eat wild pig for this reason; however the same meat is very highly sought after for premium sausages in Germany and some other European countries. Of course it is very processed by the time it is eaten.
