All this safety gear you suggested may be dangerous. I recall that there were lawsuits against people who wore this sort of stuff in demonstrations in Germany. Don't ask me details, it's long time ago.
As I recall, it was said that someone who wear protection intend to throw stones.

I suggest two demonstration forms (between others):
One was a human chain between to cities about approx 80 km long. This is a great thing, especially in our media centred society, makes good TV pictures.
The second was used against the DDR regime, the Monday demonstrations. They were very peaceful as I remember, they only united at a place (this sort of places in the center of a town, I don't know it that exists in the US) with candles, no speech no music ,silent (well this was long time ago as well..). Nobody can attack you, because you are not doing even saying anything, you are even not showing any posters.

Maybe the US police is a bit rougher, but it may helps if you are caught by the police, fall immediately to the ground, act as if something hurt you terrible etc. the best is if you have some press around you. The police does not want to attack innocent people when it may be reported.
