pstarr, I'll respond to your individual points later, but in the meantime I've found a study into integrating ethanol plants with methane digesters. Here it is.

They only consider using the thin stillage, as the rest is used as wet distillers grains.

The biogas potential of the fermented thin stillage liquor is = 104,899 x 48 = 5,035,129 m3


Given that the thin stillage is only a quarter of the total stillage, one can assume that the total would be ~20 million m3. And they're not using thermophilic digestion which apparently has up to double the methane production per unit of dry mass. So it does seem feasible. Adding some of the cellulosic material may also increase overall yields.
