I imagine as fuel becomes scarce they'll probably have escorts and possibly add armor to the cab of the fuel truck (bullet proof it at least).

Best way to stop this is have them tracked by GPS like they do with trucking fleets that handle HAZMAT. THat way if they get stolen they can be recovered fairly quickly.

I saw in the news this morning, there were a couple of guys in California, had a trailer all set up to siphon gas from gas stations. The guy would fake a breakdown with the trailer setting over the tank fill holes, then a guy in the trailer would drop a false bottom off the trailer, run a hose down to the underground tanks, and pump the fuel out while the driver "worked" on the truck.
