Brewing a cup or pot of coffee can be as simple as flipping a switch on the Mr. Coffee or as sublime as taking the time to hand pour a drip.

The latter method is what Isaia refers to as the "third-wave" of coffee enjoyment.

"Years ago we simply brewed a pot of coffee, probably percolated. Then Starbucks and chain coffeehouses became popular with espresso machines offering foamy cappuccinos and milky lattes along with flavored coffee drinks. Now we're paying more attention to quality, sustainability and attention to detail," says the roaster. "People want to be educated about where the beans come from and what method of roasting is used."

I question the direct relevance of coffee in the context of PO, but it interests me, anyway. I am a roaster and am familiar with much of the discussion that would otherwise be dismissed by others. It's like anything else, really. There is a lexicon, and if you're not exposed to it on a daily basis, it essentially means nothing to you. All that said, i have noticed a discernable rise in bulk wholsesale green coffee prices over the past year, which i personally attribute to the rising costs of shipping. Coffee isn't that much different than any other food product, and all kinds of food prices are rising these days. Hence, local foods are on the rise. LAstly, if anyone would like to send me a pound or two or ten of Geisha, i won't look a gift horse in the mouth.
